2022-01-20 (Th) EWC_Panel EWC_Panel Displaying chords without memory issues

As I found earlier, an array of placeholders pointing to Strings is not 100% compatible with the OLED library. When I displayed chord names, I used a switch() statement, and the data was inside each branch and stored in EEPROM. I wrote another chord function that assigns the data set to an array for easy computation when I play a note. If I reuse the switch() technique for the finicky instrument names, I may revert to the Adafruit code and save myself some of the memory issues that GuyverOLED produces. I removed the code that calculated tempo, which I wasn't using, and trimmed 3% from the dynamic memory usage.
