2026-01-11 (Su) Critical Affection: Getting ready for KPop Demon Hunters vegetarian RECIPE

Ingredients:
  • SHIN (Green Vegan) ramyun noodle packet
  • 20mL (1 tablespoon) PB2 Pure peanut powder ()
  • Egg (medium boiled or uncooked)
  • 150mL coconut milk
  • Frozen vegetables
    • Corn (approximately 100 grams)
    • Edamame (approximately 100 grams)
  • Frozen shiitake mushroom slices  (approximately 100 grams)
  • 150mL cow milk
  • Furikake to top 

Instructions:

  1. Boil 700mL water in a pot
  2. Add packaged seasoning packets, packaged flakes, PB2 powder, and coconut milk
  3. Add frozen vegetables and mushrooms 
  4. Bring back to a boil
  5. Add the dry noodles
  6. If using an uncooked egg, crack it into the water one minute after the noodles
  7. Remove from heat
  8. Stir in the cow milk
  9. If using a medium boiled egg, cut it in half and place on top
  10. Sprinkle furikake on top 
I loved the movie KPop Demon Hunters when I saw it months ago, and now that we were watching it for Critical Affection, I wanted to make a Korean-inspired dinner for my wife and me. I eat a lot more packaged noodles than I ought to, and I looked into ways to make them taste a bit better. I created a simple recipe to elevate a packet of SHIN noodles, using the vegan version for my wife. The trick I wanted to achieve was to make a creamy broth like the kind you find in ramen shops with ingredients I had in my kitchen. I heard about adding peanut butter, but I found that peanut powder mixed really well, and my wife had some next to the range, so I tried it a bunch and found that a tablespoon was enough to turn the clear red broth into an opaque milky one. I usually add whatever frozen veggies are handy, but corn and edamame are common and healthy so I added them. I always keep frozen, sliced shiitake mushrooms on hand, and they elevate this soup immensely. The last trick was to add some cow's milk at the end so it would not scald in the pan and bring the soup to a temperature where it is immediately ready to eat.

I served the noodles with some vegetarian kimbap from the store and some spicy Buldak chips for heat. The ingredients and proportions are highly flexible. Tahini also works well for making the broth creamy. Different vegetables, or raw vegetables, could work wonderfully. An egg boiled in soy sauce would be 10 times better than a plain boiled egg. Go nuts, my friends!
